As any criminal will tell you, stealing stuff is only part of the process. Then you have to go and turn it into something you can use, unless you can magically turn car stereos into food and spinning rims.
Speaking seriously, I doubt that the corp thief will be able to get much actual currency out of the theft, if any at all. It's child's play to track any attempt at money-laundering if you know where to start and have 100% access to all financial records. CCP will put him on a list and some dude in a cubicle will review his transactions on a regular basis and bring out the banhammer if there are any irregularities. I've done it myself for other games and believe me, it's easy to the point of dullness. So if the corp thief does start moving any significant amounts of isk to other accounts, cubicle guy will eventually look it over, scratch his nuts, and send on a recommendation to ban under terms of service.
This sort of things is a splendid way to say "fuck you!" and spend the rest of your time in Eve flying officer-fit machariels, but your chance to turn it into vast sums of cash is pretty limited.

It would be ridiculously hard to move such an astronomical sum around without getting caught, even using every trick in the book to do so. I suppose you could try something like 'Falling' for Jita scams set up by the buyer etc but even that would be flagged if it happened enough and would take forever anyway
Couldn't he just turn it all into PLEX and resell it through Shattered Crystal or something? I'm not sure how that kind of thing works having never done it, but the exchange rate would be lower anyway so he might be tempted to just keep it all and float his own all 4-titans and Moms fleet

He can't. Of course he could buy up all of Jita's PLEX-stock, but only to turn it into ISK again. There is no way to turn ISK into real life currency the game in the legal ETC/PLEX business though. Shattered Crystal gets the codes from CCP as a licenced dealer, they sell it, forward the cash cut to CCP and keep their cut; the whole RL-to-ingame-currency transformation doesn't start before an end user converts an ETC into two PLEXes and decides to sell them.
The facts have a strong anti-A- bias.

The clever way to go about it would be to try to arrange a bunch of smaller transactions, say on the 5B level or so. After you'd get maybe 100 of these lined up (or with a few buyers and many alts) you would transfer the isk to these accounts AND ~25 totally innocent bystanders, thus introducing a level of uncertainty into the process. But that's hardly foolproof.
Alternatively you could try to work a deal with CCP where you turn the ISK into PLEX and then donate it to charity. The charitable deduction might earn you a tax credit, though the complexity of the transaction - internet, foreign company, virtual commodity - makes me cringe and probably raises red flags at your favorite governmental taxing agency. So probably not worth it.
From what I can see of RMT'ers, they generally deal in relatively small amounts of isk sent from a multitude of alt accounts. They throw up some much chaff that CCP isn't willing to devote the effort to investigate them down. But when you have a starting point it all becomes childishly simple to watch over.
Investigators would just follow the money trail banning every single account that received a significant portion of that isk. And as I explained before resellers exist in large part because CCP doesn't find it worth the effort to go after them and there is little incentive to change that.
In short, resellers will know the risk and any one of them willing to take it on will screw you way down on the price. And of course, there is the whole conundrum of "Do I trust this dude in the Ukraine to actually pay me for my isk?"
That's what I was going for, it's the only method I can see working and even then around 5b might be too much anyway

I remember talking to him on Mumble in late December and he was clearly not happy with ME. The fact that people didn't pick up on it and let him have access to all that stuff was just a heist waiting to happen. I am not surprised he did this at all and he was only on comms for like an hour with us.
